Owners Liz and Stuart are enhancing the already considerable appeal of the White Pheasant with subtle improvements that preserve all the period charm. The original building dates from the 1600s and is little changed down the years, and inside, wooden floors, pine furniture and pastel shades create an attractive, stylish ambience. The inn is to a large extent food driven, and Stuart at the stoves produces `traditional British food with a fusion'; he uses top local suppliers for the very best ingredients, including super seafood and rare breeds beef, to regale his customers with dishes of a sophistication not often seen in a country inn. His influences are global, and the wine list also tours the world.

There are seats for 40 plus diners, and food is served every lunchtime and evening. Private parties can be catered for and larger functions can be accomodated in the garden during summer in a marquee. The inn stands on the A142, with quick and easy access to Newmarket in one direction and Ely in the other. The Cathedral is just one of numerous attractions in Ely - there are also two fascinating museums - and Newmarket is known far and wide as the racing capital of the world. Even closer to the White Pheasant are Downfield Windmill at Soham and the National Trust's Wicken Fen, Britain's oldest nature reserve, whose 600 acres of undrained fenland are famous for its rich plant, insect and birdlife, a delight for both naturalists and walkers.
